BROWN STEW MILK FISH

milk fish as it is locally called in the Philippines is a  national fish. This fish is one of the many staple diets by filipinos although milk fish is wide spread in south east ASIA Countries like Indonesia and Taiwan have milk fish also in their diet. To describe this fish, the scales are bright silver. Slender body and the largest I have  seen is about two feet. They thrive either in fresh water lakes,  water and salt water. When cooked, the flesh is white as milk ( that is why it called milk fish ) and lots of needle like fish bone on it’s flesh. Wide spread throughout the islands but the most tasty ones comes from Dagupan ( northern part of Luzon, Philippines ).
If you are now ready, here is the recipe: JAMAICAN BROWN STEW  MILK FISH. 2 lb milk fish, 1/4 cup okra, 1 tablespoon garlic pure, 1/8 cup carrot chopped, 1/2 cup chopped onion, 1,2 cup red bell pepper, 2 tbs season salt,1 tsp black pepper,2 cup coconut milk,1/2 stick margarine, deep fry milk fish, until it is crispy, heat saute pan,add butter until hot, then add garlic, peppers, onion, okra, and cook over medium heat, then place fish in saute pan and add season salt, black peppers, and a pinch of accent, cook until fish is nice and soft, serve with white rice.
